The Cloudy Bay Pelorus (named after a dolphin) Non Vintage is a chardonnay-predominant blend of selected vintages. It is a fresh, aperitif style sparkling wine with apple-crisp flavours, underpinned by nutty yeast complexity derived from two years bottle maturation on lees.
Several different clones of chardonnay and pinot noir are used in the vinification of Pelorus Non Vintage. All grapes are pressed without crushing and the juice is given a short period of settling which is followed by racking and inoculation with a pure strain of Montrachet yeast.
