Sec

Sec, can simply be used to describe Champagne that is dry in nature.  Despite the literal meaning of the word Sec being dry it is not however as dry as either Extra Brut or even Brut Champagnes.  Sec wines fall comfortably in between Brut and Demi Sec due to them being both dry and sweet in synchronism.  Unlike Brut Champagnes, the Sec varieties of wine retain some of their sugar, producing a delicately subtly sweet sensation.  Sec wine is an adaptable wine that can be drunk as an aperitif or as dining companion.
